By default the start date is counted and the end date isn't, so 1 to 2 January is 1 day. Tick "Include the end date" to count both.
Working days skip Saturdays and Sundays. Public holidays aren't removed, because they differ by country and state.
Adding months keeps the same day where possible. 31 January + 1 month gives the last day of February.
